Sprinkle gelatin over orange juice and let gelatin bloom.
Combine honey and yogurt and set aside.
Mix the three fruits together in a bowl.
Heat orange juice and bloomed gelatine for two minutes, then stir.
Spoon yogurt (honeyed or not) into four parfait glasses.
Top with fruit mixture.
Pour heated orange juice and gelatin evenly over the fruit.
Refrigerate for about 5 hours.
Garnish with a half-slice of orange.
