Brown the chicken cubes in oil in a skillet and season with ginger and pepper. Cut the cooked chicken in small pieces. Cool and set aside. Mix the diced pear and apples in a large bowl, sprinkling with lemon juice. Add the celery, pecans and raisins. Add the chicken pieces to the salad. Mix the dressing ingredients in another bowl. Add the dressing to the salad and mix. Cool in the refrigerator.
