In a non-stick frying pan, heat oil and add eggplants, onions, garlic and sauté for 10 minutes.
Add peppers and sauté for another 5 minutes. Add Vivi Bene O'Sole Mio Rosée Sauce and simmer.
Cook pasta as per package instructions and strain.
Heat sauce and add pasta.
Place on a plate and garnish with fresh basil and parsley.
