In a roasting pan with a lid that can close when the pork is added, add apple juice, ½ cup maple syrup, ground cloves, mustard seeds, garlic clove, ½ tsp. ground ginger, and apple cider vinegar. Mix well.
Add ham, fat side up, and bring to a boil over medium heat.
Cover and let simmer 75 minutes.
Turn meat half-way through so uncovered portion is immersed in liquid.
Preheat oven to 375ºF (190ºC).
Remove ham from heat and turn a second time.
Mix together remaining ½ cup maple syrup and ½ tsp. ground ginger and pour over ham.
Place roasting pan in oven and cook for 15 minutes or until top of ham is golden.
Remove from oven and place on a serving plate.
If desired, reduce sauce by adding Dijon mustard and cooking over high heat for 10 minutes.
Serve with ham.
