Put pancake mix in a bowl. Mix water with maple syrup and whisk into pancake mix, beating until batter is smooth. Let stand 2 minutes.
Heat a non-stick skillet over medium heat and pour 1/2 cup (125 mL) batter into it. Top with peach slices in the centre and cook until bubbles break. Flip and cook until browned on both sides. Repeat until batter is all used up.
Serve immediately with maple syrup.
