Preheat the oven to 350°F.Line a rimmed baking sheet with aluminum foil.In a medium saucepan over medium heat, add olive oil and sauté onion for 5-7 minutes, until translucent.In a large bowl, combine the onion, carrot, peppers, zucchini and celery.Stir to combine.Add the chicken, bread crumbs, egg, salt and pepper and combine well until it forms a semi-wet mixture.Form mixture into golf-ball sized balls (use an ice cream scoop).Place balls on prepared baking sheet.Bake for 25 minutes, or until meat thermometer inserted into centre reaches 165°F.
