Preheat the oven to 350°F. Line a rimmed baking sheet with aluminum foil. In a medium saucepan over medium heat, add olive oil and sauté onion for 5-7 minutes, until translucent. In a large bowl, combine the onion, carrot, peppers, zucchini and celery. Stir to combine. Add the chicken, bread crumbs, egg, salt and pepper and combine well until it forms a semi-wet mixture. Form mixture into golf-ball sized balls (use an ice cream scoop). Place balls on prepared baking sheet. Bake for 25 minutes, or until meat thermometer inserted into centre reaches 165°F.
