Cook leeks in boiling salted water or chicken broth for 15 minutes or so, drain.
Place a mignon leek on a slice of ham and roll up.
Place the mignons leek roll-ups in a gratin dish.
Prepare the white sauce, add Dijon mustard and season to taste.
Cover the leeks with sauce and top with shredded cheese.
Bake for 30 minutes.
