Preheat the oven to 425°F (220°C).
In a skillet, melt the butter and lightly brown the apple, onion and ground meat. Deglaze with the apple juice, then moisten the mixture with the demi-glace. Add the seasonings to taste and simmer until the meat is cooked through. Set aside.
Using a rolling pin, roll out the dough on a floured surface and cut into 8 six-inch (15-cm) squares. Place each square into a muffin-tin section. Divide the mixture and spoon it onto the pasty squares, then fold up the corners of each square and press them together to make small bundles.
Bake in the oven for about 30 minutes or until the pastry turns golden brown.
