Dressing: Combine the first three ingredients. Add the lemon juice and mix again. Gradually add the fresh cream while stirring constantly. Add the dill, salt and pepper. For a thicker dressing, add more mayonnaise. For a slightly spicier taste, add a bit more horseradish.
Lay a few slices of gravlax salmon, trout and smoked salmon on each plate, leaving room for the dressing. Spoon the dressing onto the plate and garnish with capers. Add freshly ground pepper over everything.
