Soak noodles in a large bowl of warm water for 30 minutes. Bring chicken broth to a boil, add chicken breast, ginger and mushrooms, and simmer for 20 minutes. Remove chicken breast. Tear chicken into threads. Stir salt, sugar and mushrooms into broth. Bring to a boil 5 minutes. Using scissors, cut noodles into 6 in (15 cm) lengths. Add to soup and remove from heat immediately. Add torn up chicken. Sprinkle with green onions and pepper.

Preparation
