Soak noodles in a large bowl of warm water for 30 minutes.Bring chicken broth to a boil, add chicken breast, ginger and mushrooms, and simmer for 20 minutes.Remove chicken breast. Tear chicken into threads.Stir salt, sugar and mushrooms into broth. Bring to a boil 5 minutes.Using scissors, cut noodles into 6 in (15 cm) lengths. Add to soup and remove from heat immediately.Add torn up chicken.Sprinkle with green onions and pepper.

Preparation
