Put salmon in a dish, pour 1/2 cup (125 mL) marinade over them and refrigerate 20-25 min, turning salmon at least once to coat thoroughly. Meanwhile, dice sweet peppers, red onion and hot pepper (if desired). In a skillet, heat oil and brown ginger and vegetables 2 min. Add remaining marinade, stirring to coat vegetables thoroughly. Set aside. In the same skillet, cook salmon 3-4 min per side. Arrange salmon and vegetables in plates.

Preparation
