In a medium saucepan, combine stock, coconut milk, lemongrass and garlic. Cover and cook 10 minutes over medium-high heat. Add Sambal Oelek, chicken, carrot and spinach. Cover and continue cooking 5 minutes. Add green onions and Thai basil just before serving.
