With a sharp paring knife, cut carrots and zucchinis into very thin strips. In a saucepan, bring chicken broth to a boil and add carrot strips. Bring to a boil again and add zucchini strips. Cook over high heat 2 to 3 minutes until the vegetable strips are cooked tender-crisp. Gently stir parsley and basil. Top vegetables with cheese cubes and serve immediately.

Preparation
