Cook pasta according to package instructions. Set aside.
In a pot, heat oil and brown shallot. Add wine and reduce by half.
Meanwhile, in a bowl, beat cream, eggs, Parmesan and chicken base together. Set aside.
Add pasta, cream and bacon to the pot.
Heat 2-3 min until sauce thickens.
Just before serving, top with fresh ground pepper to taste.
These dry, more delicate wines stand out with their pale colour, simple fruit aromas, and the sensation of freshness their acidity brings forth.
