Preheat oven to 350°F/180°C. In a skillet, heat oil and cook onion, garlic and red pepper on medium for 3 min. Transfer vegetables to pie crust. Add spinach and pollock. Set aside. In a bowl, mix eggs, milk, cheese, dill, salt and pepper together. Pour over vegetables. Bake about 50 min.
