Preheat barbecue to medium.Place a tortilla on the counter and cover with half the cheese.Add selected toppings. Sprinkle with remaining cheese, cover with second tortillato enclose filling. Cook covered 2 to 3 minutes on each side. Flip, without hesitating,using a large spatula; otherwise the filling may come out.Cut into wedges and serve immediately with raw vegetablesor salad.

2 plain tortillas
1/2 cup (125 mL) grated cheese (mozzarella, taco mix, or other grated cheese)
3 Tbsp. (45 mL) meat or substitute: cooked and diced chicken or pork, cooked ground meat, cold meat in strips, drained canned tuna, or rinsed and drained legumes
3 Tbsp. (45 mL) diced vegetables: tomatoes, avocados, sautéed or grilled peppers, cooked mushrooms, onions, celery, zucchini, or spinach, etc.
1 Tbsp. (15 mL) diced fruit (optional): apple, pineapple, mango, etc.
your choice of condiments: sliced green or black olives, dried tomatoes, pesto, chili peppers, mustard, etc.
