Preheat barbecue to medium. Place a tortilla on the counter and cover with half the cheese. Add selected toppings. Sprinkle with remaining cheese, cover with second tortilla to enclose filling. Cook covered 2 to 3 minutes on each side. Flip, without hesitating, using a large spatula; otherwise the filling may come out. Cut into wedges and serve immediately with raw vegetables or salad.
