Preheat oven to 450°F (230°C).In a large non-stick frying pan over high heat, heat oil and cook steak strips, garlic, chili powder, cumin and coriander for 3 minutes, stirring constantly, until browned.Whisk flour into milk until smooth. Pour milk mixture over steak mixture. Reduce heat and simmer, stirring constantly, for 5 minutes or until thickened. Remove from heat and add 3/4 cup (175 mL) cheese and salt. Stir until cheese is melted.Divide steak mixture evenly among tortillas. Cover with tomato slices and remaining cheese; fold tortillas in half, like half-moons. Placer on a cookie sheet and bake for 5 minutes or until hot and tortillas are crisp. Cut into wedges.

Preparation
