Heat the oil in a large non-stick skillet over medium heat. Brown the pork 3 to 4 min. Remove from the skillet, cover and let stand.
In the same skillet, brown garlic, eggplant, pepper, summer squash and onion 7 to 8 min.
Add tomatoes, oregano and pork; reheat 1 min. Season to taste.
Garnish with black olives, if desired. Serve with a loaf of country-style bread and romaine lettuce salad.
