Preheat the barbecue to medium. With a knife, slit the edge of the steak to the centre. Insert cheese, mushrooms and coriander. Close with a skewer. in a pan, brown onion 1 minute in butter/oil. Add remaining sauce ingredients and simmer 2 to 3 minutes. Coat steaks with basting sauce and grill 3 to 4 minutes on each side, basting often while cooking.
