Preheat oven to broil. In a bowl, beat eggs, milk, parsley, salt and pepper together. In a 10-in. (25-cm) ovenproof skillet, cook garlic, leeks and peppers 2 min. in hot oil. Add egg mixture and smoked salmon. Sprinkle olives in. Cook on medium-low heat about 8 min. or until edges are cooked but the centre is still runny. Sprinkle with cheese and broil 4 min. or until cheese is browned.
