This recipe is prepared in a smoker. Marinating : 24 hours. Smoking : 3 h 30 min. Wood to use for smoking : Hickory
Blot tofu with paper towels to remove excess water.
Cut tofu block into 2.5 cm (1 inch) cubes.
In a bowl, mix 250 mL (1 cup) of warm water with maple syrup and miso granules. Place tofu in the bowl and toss to coat well with marinade. Cover and marinate in the refrigerator for 24 hours.
When ready to smoke, preheat smoker according to manufacturer's instructions to 120°C (250°F). Add hickory wood to the smoker.
Drain tofu cubes slightly and discard marinade. Place tofu cubes on hot smoking rack. Smoke for 3 hours.
Remove tofu from smoker and place in a bowl. Add barbecue sauce and stir to coat tofu with sauce. Return the tofu to the smoking rack and continue smoking for 30 minutes.
