In a glass bowl, mix all the marinade ingredients. Put filets of sole in the marinade. Cover and marinate1 hour in the refrigerator. Preheat the barbecue to medium. Remove filets of sole from the marinade and drain well. Make 4 brochettes, alternating chunks of filet of sole, bacon, courgette and tomato. Brush brochettes with olive oil and roll in wheat germ herb mixture. Grill gently 6 minutes, turning often.
