Brown carrots, leek, red pepper and garlic in butter and oil for 3 minutes.
Add chicken broth and cook on low until vegetables are almost cooked.
Add ham and season.
Dilute the corn starch in milk and add to vegetables.
Cook on low heat while stirring until the sauce has thickened, around 2 minutes.
Add mustard and chives.
Serve on pasta.
