Bring broth to a boil. Remove from heat and pour over couscous. Cover and let stand 8 - 10 minutes. Stir couscous with a fork. Cool. Gently stir in onions, tomatoes, parsley, mint and garlic. Toss with lemon juice and olive oil. Adjust seasoning. Serve. Goes well with grilled sausages and vegetables.

Preparation

Bring broth to a boil.

Remove from heat and pour over couscous. Cover and let stand 8 - 10 minutes.

Stir couscous with a fork. Cool.

Gently stir in onions, tomatoes, parsley, mint and garlic.

Toss with lemon juice and olive oil.

Adjust seasoning. Serve.

Goes well with grilled sausages and vegetables.
