Heat oils in a wok over medium heat.Sauté onions for a few seconds.Add ginger, turmeric and chili.Add cubed turkey, and sauté for 3 - 4 minutes.Add garlic, lemon grass, water and coconut milk.Bring to a boil, reduce heat to medium-low and simmer for 5 - 10 minutes.Add peas and cook for 3 minutes.Remove from heat and stir in coriander.
