In a bowl, combine ground beef, Emmental, Cheddar, Havarti, mustard and green onions. Shape mixture into six patties, occasionally dipping hands in water to avoid sticking.
Alternatively, shape the ground beef only into 12 thin patties and top 6 patties with cheese mixture. Cover with remaining meat patties and seal.
Grill patties over medium-high heat for 7 to 8 minutes on each side, turning only once.
Toast buns. Serve patties over buns and garnish with favourite condiments.
