After soaking the chick peas, rinse and cook about one hour, drain, spread on paper towels to dry at room temperature, about 8 hours. Spread chick peas in an oven dish and coat with oil. Add salt and mix well. Oven roast about 75 to 90 minutes at 300°F / 150°C stirring from time to time. Cool and store in an air-tight jar.

Preparation
