Cut tuna into large sticks 2.5 cm x 10 cm (1 in x 4 in), season and coat with sesame seeds.
Heat oil in pan and sear tuna quickly on all sides. Remove from heat and cool immediately. The tuna must be cooked outside and raw inside.
Sauce: mix all ingredients.
Cut the tataki into thin slices and serve with a small salad and soy mustard sauce.
Serve as an appetizer with guacamole.
