In a skillet, heat oil and butter on medium heat. Brown cutlets 2 minutes per side. Remove and keep warm. Add shallots to skillet and cook 1 minute. Add lemon juice and stock and reduce by half. Stir in cream and lemon zest and cook for 2 - 3 minutes. Pour sauce over cutlets and sprinkle with chopped basil.

Preparation
