In a skillet, heat oil and butter on medium heat.Brown cutlets 2 minutes per side. Remove and keep warm.Add shallots to skillet and cook 1 minute.Add lemon juice and stock and reduce by half.Stir in cream and lemon zest and cook for 2 - 3 minutes.Pour sauce over cutlets and sprinkle with chopped basil.
