In a pot, cook onion, garlic and spices in hot oil for 1 minute. Add tomatoes, vegetable juice and sweet potato. Simmer half-covered for 15 minutes. Add remaining ingredients and cook uncovered for another 15-20 minutes. Sprinkle with grated cheese just before serving.
