Wash celery stalks and cut in two lengthways. Cut each piece in two.
Scrub carrots under running water. Cut in two lengthways.
Lay cut carrots flat on the work surface and cut in two lengthways for a total of 8 sticks.
Open pita pockets and spread with ricotta cheese.
Lay 4 carrot sticks and 4 celery sticks on each pita.
Roll each pita up tightly. Cut into small pieces.
