In a large pot, heat oil over medium-high heat, add summer squash, zucchinis and water. Cover and lower heat to medium. Cook until soft but slightly crisp; about 4 min. Place cooked vegetables in a large bowl and add the remaining ingredients. Mix to coat vegetables well. Serve warm or as warm vegetables.
