Preheat oven to 350°F/180°C. Prepare pastry: roll out thin to line a 9-inch pie shell or quiche pan or tin. Prick the base with a fork and bake for 10 to 15 minutes.
Preheat oven to 425°F/220°C.
Beat eggs, cream, milk, nutmeg, salt and pepper together. Carefully pour 4-cheese mixture into 4 separate areas of the pastry case.
Bake for 30 to 40 minutes, until cheese cream mixture is set and is slightly golden in colour. Serve hot.
