In a small bowl, mix dressing ingredients together. Set aside. Wash, core and dice apple. Sprinkle with lemon juice. In a large bowl, mix apples with remaining salad ingredients. Before serving, drizzle with dressing and toss to coat everything.

  • Dressing:

  • 1 tsp.
    (5 mL)
    Dijon mustard
  • 2 tsp.
    (10 mL)
    cider vinegar

  • 1/4 cup

    extra virgin olive oil

  • To taste Salt and pepper
