In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper. Simmer 45 minutes. Drain and set aside. Preheat the barbecue to medium. In a pan, combine all sauce ingredients. Bring to a boil and simmer 2 minutes. Place spare ribs on a sheet of oiled aluminium foil and brush with sauce. Cook 5 to 7 minutes on each side.

Preparation
