Heat oil in a big pan, on medium. Brown onion and beef 3 - 5 minutes, stirring. Stir in chilli, garlic, tomato paste and juice. Cover and simmer 15 minutes on low.Season to taste. Add beer. Simmer uncovered 15 - 20 minutes on low until liquid evaporates.Put some shredded cheese and shredded lettuce in each taco shell. Top with ground beef, diced tomato and chopped parsley.
