In a skillet, brown onion in hot oil for 1 min. Add vegetables and cook 2 min. more. Remove and set aside.
In the same skillet, cook meat 5-7 min. or until thoroughly done. Add seasonings, water and vegetables and continue cooking over medium-high heat for 5 min.
Spoon mixture into taco shells and garnish with lettuce and cheese.
