In a large saucepan, bring water to a boil.
Add the salt and cook the asparagus 3 to 4 minutes or until tender but still crisp. Cool under cold water and set aside.
In a bowl, put the apple cubes, sprinkle with lemon juice and set aside.
In another bowl, mix the salad dressing ingredients. Then add all remaining ingredients, including the apples and lemon juice. However, keep the parmesan cheese to garnish. Set aside.
Cook the tournedos according to your favorite method.
Serve the salad on two leaves of lettuce.
