Preheat barbecue to high. In a bowl, mix together beef,onion,chives,salt and pepper. Make 4 squares patties. Cook patties on the barbecue until thoroughly cooked and showing no pink Top each patty with a slice each of apple and cheese. Cook until cheese begins to melt. Split Ciabattas lengthways and toasted a few secondes. Spread mustard on rolls and slip in patties. Serve with carrot-celeriac remoulade.
