Put potatoes, onion and garlic in a deep pot.
Add water to cover and bring to a boil.
Cook vegetables over medium heat until done. Drain and save cooking water.
Purée vegetables in blender until smooth and creamy.
Return vegetables to the pot with cheese, 1 1/2 cup (375 mL) cooking water and milk. Blend well.
Season to taste, reheat over low heat and serve.
Serve with toast.
