Preheat oven to 400 °F (200 °C).Steam julienne of leek for 10 minutes. Drain well.Place leek in food processor with chicken or turkey, shallot, fennel, garlic, Bleubry cheese and mint. Season with pepper. Process to combine.Arrange 1 filo sheet on work surface. Brush with butter. Top with second sheet and brush with butter. Top with third sheet. Cut triple layer in half. Place 1/6 of chicken mixture in centre of each filosection. Roll up to enclose filling and brush with more butter.Repeat with remaining phyllo sheets and chicken filling, to make a total of 6 packets.Place packets on greased baking sheet. Bake 20 to 25 minutes, or until golden-brown. Serve with a green salad.Variation:Try this recipe with Canadian Camembert or Brie.
