Preheat the oven to 350°F /180°C. In a frying pan, heat the oil. Cook the chicken breasts for 3 minutes per side. Spoon some demi-glace over each breast. Place 1 or 2 sage leaves on each breast. Cover each with a prosciutto slice. Transfer to the oven, cooking the saltimboccas 5 minutes per side, starting with the prosciutto side up.
