In a wok or large pan, heat oil and cook onion with ginger, coriander, cumin and turmeric over medium heat for 3 min., stirring constantly.Add coconut milk and water and bring to a boil. Cover and simmer 5 min.Stir in potato and tomatoes and simmer for 7 min.Add cod, snow peas and miniature corn and cook for 5 min. more or until fish is easily flaked with a fork.
