Cut apples into julienne. Chop onion. Slice carrot very thin.
Over medium-high heat, cook apples, onion and carrot in butter for about 4 minutes. Stir curry powder and set aside.
Preheat oven to 400°F (200°C).
In the centre of 4 large sheets of double-ply foi, add a piece of salmon and season with salt and pepper.
Spoon one fourth of the reserved mixture over each piece of salmon and top with 1 Tbsp. (15 mL) sour cream.
Fold and crimp edges to close the bundles airtight. Bake for 12-15 minutes.
These dry wines and ciders have a nose of fruit and flower aromas while having a rich taste on the palate. They get a pleasant liveliness from their acidity.
