Peel cucumber and cut into 3/4 inch (2 cm) chunks.
Combine with tomatoes cut into similar size pieces and chopped onion.
Combine olive oil, lemon juice, salt and pepper, whisk until blended.
Pour over vegetables; toss to coat.
Sprinkle with cheese, oregano and olives.
