In a deep fryer, preheat duck fat to 275°F (140°C).Peel potatoes and cut into fries.Blanch fries about 4 minutes and drain on paper towels. Cool.In the deep fryer, heat duck fat to 350°F (180°C).Add fries and cook about 5 minutes or until golden brown.Drain and salt. Serve immediately.Accompany with preferred flavoured mayonnaise.

Preparation
