Trim the base from the endives and shred.
Put Gorgonzola and cream in the blender.
Slowly add olive oil and honey.
Season. Pour dressing in a bowl.
Stir in chopped coriander.
In a bowl, place endive leaves and shredded radicchio.
Drizzle with Gorgonzola dressing.
Top with walnuts.
