In a large pot of boiling salted water, cook pasta following package instructions. Reserve 60 ml (1/4 cup) of cooking water. Drain and set aside.Meanwhile, in a large skillet, heat 30 ml (2 tbsp) olive oil over medium-high heat. Cook the turkey strips for 3 to 5 minutes, or until they are cooked and golden brown. Set aside.In the same skillet, heat remaining oil. Cook leeks and garlic for 4 to 6 minutes, stirring often. Season with salt and pepper.Add chicken broth, white wine and green peas. Bring to a boil and simmer for 2 minutes. Add pasta, turkey strips and ricotta. Mix well and rectify seasoning. Add cooking water if needed.
