Preparation - fondue: In a pan, bring maple syrup to a boil. Whisk the cornstarch into the cream and pour into the boiling maple syrup. Simmer 1 minute. Add maple extract. Pour into a fondue dish. Keep hot. Fruit presentation: On a large serving platter, arrange cantaloupe balls, honeydew melon quarters, bunches of grapes, strawberries and apples. Dip the fruit in the hot maple fondue.
