In a large skillet, cook onion in butter over medium-high heat until golden. Deglaze with maple syrup and water. Bring to a boil and reduce heat to low. Add salmon steaks and cook about 3 minutes per side. Remove salmon and keep warm. Reduce liquid over high heat until it forms a thick glaze. Season to taste. Spoon glaze over salmon steaks and serve with celeriac.
